🍑 Brown Butter Peach Burrata Crostini + Fresh Peach Bellini

The Perfect Summer Brunch Recipe

There's something about summer that makes me want to slow down, invite a few friends over, and put together a beautiful brunch spread.

When peaches are in season, they deserve to be the star of the table. Pair them with creamy burrata, nutty brown butter, fresh basil, and a drizzle of hot honey, and you have a recipe that feels elevated without being difficult to make.

To complete the experience, I paired these crostini with a Fresh Peach Bellini—because every great brunch deserves a signature cocktail.

🍑 Brown Butter Peach Burrata Crostini

Ingredients

  • 1 French baguette, sliced

  • Olive oil

  • 2 ripe peaches, sliced

  • 3 tablespoons butter

  • 8 oz burrata

  • Fresh basil leaves, torn

  • Hot honey

  • Flaky sea salt

  • Freshly cracked black pepper


Instructions

1. Toast the Crostini

Preheat your oven to 400°F.

Brush both sides of each baguette slice with olive oil and arrange them on a baking sheet.

Bake for 8–10 minutes, flipping halfway through, until golden and crisp.


2. Brown the Butter

Melt the butter in a skillet over medium heat.

Continue cooking until it becomes golden brown and develops a nutty aroma.


3. Cook the Peaches

Add the sliced peaches to the browned butter.

Cook for 2–3 minutes per side, just until softened and lightly caramelized.


4. Assemble

Spread burrata onto each crostini.

Top with warm peaches.

Finish with:

  • Torn basil

  • Hot honey

  • Flaky sea salt

  • Black pepper

Serve immediately.


🥂 Fresh Peach Bellini

Ingredients

  • 1 ripe peach

  • 1 teaspoon lemon juice

  • 1 teaspoon simple syrup (optional)

  • Chilled Prosecco


Instructions

Blend the peach, lemon juice, and simple syrup until smooth.

Spoon about 2 tablespoons of peach purée into a champagne flute.

Top slowly with chilled Prosecco.

Stir gently and enjoy.

This was my first time making burrata, and I completely understand the hype now.

The combination of warm peaches, creamy cheese, crispy bread, and hot honey creates the perfect balance of sweet and savory.

The Peach Bellini was the perfect pairing and made this feel like a true summer brunch experience.
